Bufalo Bob has taken the lowliest Mexican street food and given it a place of honor on the culinary hierarchy.  He has created a wide variety of chalupas ranging from the basic Traditional Chalupa with refried beans and cheese to more exotic gourmet chalupas like the Cordoba Chalupa with hummus, flax seed meal, ground bison, spinach and parmesan cheese.  

 

All of Bobs chalupas start with a locally produced stone ground corn tostadas that are low fat.  All of Bobs recipes are homemade using only extra virgin olive oil and sea salt.  The meats are also locally produced, range fed, all natural and free of hormones and antibiotics.
